Thanksgiving Meal Prep: What to Make the Week Before

The secret to a calm Thanksgiving is meal prep the week before. Most of the meal can be started — and some of it finished — days ahead, so the day itself is assembly rather than a scramble. This Thanksgiving meal prep plan walks through what to make, what to freeze, and what to save for the day so everything lands warm at once.

Early in the Week

Two to three days out, make the cranberry sauce (it keeps for a week and improves), roll and chill the pie dough, and bake the pies. Toast bread cubes for stuffing and let them stale. Make any dips or spiced nuts for the appetizer board. Stock the fridge with drinks. The early-week work is the part that quietly takes the day from overwhelming to manageable.

The Day Before

Assemble the stuffing and the casseroles (sweet potato, green bean) up to the bake, cover, and refrigerate. Thaw the turkey in the fridge if it isn't already. Set the table, polish the glassware, and lay out serving dishes with labels. Make the mashed potatoes and hold them covered in the fridge, or plan to make them while the turkey rests. Prep anything that won't suffer a night in the fridge.

Leave for the Day

Save for Thanksgiving itself: the turkey, the gravy from its drippings, the final bake on the casseroles, and any delicate salad. A good Thanksgiving cooking schedule leaves only the timing-sensitive work for the day, so the cook isn't doing four things at once. Meal prep is the difference between hosting Thanksgiving and surviving it.
