How to Smoke the Perfect Thanksgiving Turkey

Smoked Thanksgiving turkey is a showpiece — deeply flavored, smoky, and juicier than many oven-roasted birds. It also frees up the oven for sides and pies. Here's how to smoke a turkey for Thanksgiving, from the bird you choose to the final rest.

Choose & Prep the Turkey

Pick a fresh turkey in the 12–14 lb range — large enough to feed a crowd, small enough to cook evenly and fit on most smokers. Thaw it fully if frozen, then brine it (wet or dry) for 12–24 hours. Dry brining with salt and aromatics overnight gives crisp skin and seasoned meat without the water weight of a wet brine. Pat the bird dry before it goes on the smoker.

Smoking Time & Temperature

Smoke the turkey at 275–300°F (135–150°C) using a mild fruitwood like apple or cherry, or a light blend with hickory. Plan roughly 30–40 minutes per pound, so a 12 lb bird takes about 6–7 hours — though it's done when the thigh hits 165°F (74°C), not by the clock. A reliable meat thermometer is essential. Baste once or twice for extra moisture.

Rest & Serve

Once off the smoker, rest the turkey loosely tented for 20–30 minutes so the juices redistribute. Carve and serve with the smoky pan juices, or save them for gravy. A smoked turkey pairs beautifully with bright cranberry sauce and crisp sides that balance the richness. Start early in the day so you're not racing the clock.
